    Triple distilled single malt that was initially matured in exbourbon casks before filling a 500 litre ex-Amontillado solera cask from Bodegas Emilio Hidalgo in August 2013. The ex-sherry cask has proven to be a generous friend of the angels and 43% evaporation has occurred in the last 10 years.Nose: Developed aromas with nutty, dried vine fruits, dried apricots, figs with fruit n nut chocolate.Palate: Thick, oily & rich.     This whiskey is the forgotten exclusive release for the Celtic Whiskey Shop that was nearly lost!Bottled in 2021 but only released in late 2023, it lay forgotten in the darkest depths of a warehouse before being rescued and released.This perfect example of a Sherry cask matured whiskey has been finished in a very special Pedro Ximenez cask sourced from Ximenez Spinola, one of the finest producers of PX Sherry. In fact they only grow and bottle the Pedro Ximenez grape, making a variety of styles but most famously the traditional sweet and sticky variety. The Sherry cask has brought lots of richness and warmth to the whiskey with flavours of chocolate, dates, prunes and other raisined fruits. Very limited in number and bottled at natural cask strength of 57.2%..
