Initially double distilled at the Cooley distillery and matured in Bourbon barrels for ten years. Before being re-casked in an old Solera 500 litre Oloroso Dulce Cask for over three years. Full bodied and chewy. Flavours of coffee cake, raisins, dates, figs and fruit n' nut chocolate.
