To mark its 25th year of maturation, Celtic Cask Séasca Haon (61) stands as a remarkable single malt, single cask expression that showcases the very best of Irish whiskey craftsmanship and patience.

Distilled in 2000, this exceptional single malt began its journey in a bourbon cask, developing a foundation of soft vanilla and gentle oak. In 2014, it was transferred to a Fino sherry cask, adding elegant dryness and nutty depth, before spending its final two years in a 128-litre Cream Sherry barrel, enriching the whiskey with layers of sweetness and complexity.

The result is a whiskey of extraordinary balance, depth, and refinement.

Tasting Notes
Nose: Rich aromas of pear jam, vanilla, honeycomb, and crème caramel, with subtle notes of sultanas, charred oak, and orange blossom.
Palate: Elegant waves of orchard fruits, ginger spice, raisins, and dates, complemented by the sweetness of acacia honey.
Finish: Wonderfully complex, smooth, and velvety, with lasting warmth and finesse.

Only 166 bottles were produced, making this a truly rare and collectible release for discerning whiskey enthusiasts.

    In 2013, we sourced a selection of six 500-litre solera sherry butts from Bodegas Emilio Hidalgo, all at least 70 years-old. These were all different and included six different sherry styles; Manzanilla, Fino, Palo Cortado, Amontillado, Oloroso and Pedro Ximenez. They were all filled with Dingle single malt new make. After a full 12 years of Pedro Ximenez maturation, we feel that the cask is now ready to be a Celtic Cask. Pedro Ximenez casks are currently very popular in the whiskey industry for finishing whiskeys as they can give significant flavour due to the sweet & intense nature of this sherry style. A full twelve years maturation in a first fill PX cask would be unusual but we feel the result speaks for itself.The other five sherry casks will be bottled in the years ahead when we feel they have reached their best.This whiskey is un-chill filtered with no added colouring and was bottled at cask strength. Notes:Rancio aromas followed by sweet raisins, apple & pear chutney and toasted oak. Palate:Apple Crumble, lemon posset, rich caramel and Christmas pudding. Finish: An excellent example of an old PX cask.     The first Celtic Cask release from Dingle Distillery. A triple distilled malt that was initially matured in French virgin oak (Berthomieu Nevers Light toast). It was moved to Pedro Ximenez cask in December 2021. Expect notes of dry spice, cloves, cinnamon and nutmeg on the nose with oak, roasted, nuts, orange zest and kumquats on the palate and a peppery finish with toaches of citrus peel. Bottled at a robust 58.1%. Natural colour and non-chill filtered. A truly exceptional whiskey. ..

    This is a double distilled single malt, but curiously it comes from a distillery more famed for triple distilled malts. It spent around four months in one of our Anima Negra red wine casks which has added to the fruitiness and spiciness of the whiskey. Aromas of fig jam, dried apricots, mace, citrus and pineapple.
